SUNDAY, DAY #1 – Welcome!

Guests check into the hotel and explore Emilia-Romagna. We’ll gather together early in the evening for introductions and a review of our exciting week ahead, followed by a welcome dinner at one of Modena’s top rated restaurants, serving traditional fare in an upbeat atmosphere.

MONDAY, DAY #2

Parm, Prosciutto, Balsamic Tours & Modena Dinner

We’ll head out this morning for a Parmigiano production tour. We’ll observe how multiple generations of expert cheesemakers create massive wheels of DOP-Denominazione di Origine Protetta (Protected Designation of Origin) Parmigiano Reggiano. We’ll sample and compare the flavors of various aged cheeses. From there we will visit one of Modena’s most prestigious family prosciutto companies. Next, we head to a balsamic tasting and light lunch at A prominent Modena family Acetaia, honored for their traditional produced balsamic vinegars. Dinner tonight will be a short walk from our hotel and will feature a regional tasting menu specially prepared just for our guests.

TUESDAY, DAY #3

Modena Food Tour, Giusti Lunch, Amber Cooking Class and Dinner

We’ll begin our day at Mercato Albinelli for a walking Modena culinary tasting tour, visiting food stalls brimming with responsibly sourced produce grown by local farmers, seafood caught on nearby shores, and pasta and pastries lovingly crafted by local chefs. We will be welcomed for lunch by one of Modena’s most prestigious families, owners of Hosteria Guisti Salumeria After an afternoon reposino, we’ll head to an innovative cooking class highlighting the new wave of Italian regional cuisine with a highly acclaimed local chef, who will also prepare a memorable tasting menu for dinner.

WEDNESDAY, DAY #4

Casa Artusi Tour, Class and Lunch, Dinner at Antica Moka

We begin our day in Forlimpopoli for a guided tour of Casa Artusi, home of Pelligrino Artusi, the father of Italian Cuisine, acknowledged as the author of the first documented recipes of Italian cuisine. Our guests will take a private cooking class with professional chefs and local volunteers in the magnificent Casa Artusi culinary kitchen and enjoy a lunch after class. After lunch we’ll head back to the hotel for a short afternoon reposino. Dinner tonight will be at the one of Modena’s top-rated restaurants for a memorable regional tasting menu.

THURSDAY, DAY #5

Tortellante Pasta Class class, Bologna Culinary Tour, Shopping and Dinner

We’ll start the day with a tortellini class at Lara Gilmore and Massimo Bottura’s family Foundation Tortellante. After class, we’ll head to Bologna where a local culinary guide will lead guests on a Bologna gastronomy tour where we will visit many of Bologna’s most popular eateries, exploring the Quadrilatero market, located off the Piazza Maggiore, the main square in the historic center of the city. Dinner tonight will be back in Modena at one of the city’s most respected restaurants.

FRIDAY, DAY #6

 Ferrari Museum & Factory Tour and Farewell Meal 

Guests have the opportunity to visit the  Ferarri Museum & Factory tour before lunch. Our farewell meal will be an elegant lunch at Massimo Bottura’s newest ristorante. Afternoon is free for guests to shop in Modena. An early evening aperitivo arrivederci party will be offered as well.
